Ingredients

  • 8 oz cream cheese, softened

  • 4 oz goat cheese or ricotta

  • 1 cup roasted red peppers, finely chopped

  • ½ cup marinated olives, minced

  • ¼ cup sun-dried tomatoes, diced

  • ½ cup macadamia nuts, toasted and chopped

  • 2 tbsp fresh native herbs, chopped

  • 1 tbsp olive oil

  • ½ tsp cracked black pepper


Instructions

  1. Mix cream cheese and goat cheese until smooth and creamy.

  2. Stir in olive oil and black pepper.

  3. Fold in roasted red peppers, olives, and sun-dried tomatoes.

  4. Spread mixture onto plastic wrap in a rectangle.

  5. Sprinkle herbs and macadamias evenly over the surface.

  6. Roll tightly into a log using the wrap.

  7. Chill for at least 2 hours before slicing and serving.
