Fresh from the oven and bursting with cozy fall flavor, this Apple Cinnamon Sourdough Bread is everything you love about homemade baking in one loaf. Sweet apples, warm cinnamon, and tangy sourdough make every slice impossible to resist.


Ingredients

  • 500 g bread flour (4 cups)
  • 350 g water (1 ½ cups)
  • 100 g active sourdough starter
  • 10 g salt (2 tsp)
  • 2 medium apples, diced
  • 50 g brown sugar (¼ cup)
  • 1 tbsp ground cinnamon
  • 1 tbsp melted unsalted butter
  • 1 tsp vanilla extract
  • 1 tbsp flour for dusting apples

Instructions

  • Mix water and sourdough starter, then add flour and rest for 30 minutes.
  • Add salt and perform 3 to 4 stretch-and-fold sessions over 2 hours.
  • Toss diced apples with brown sugar, cinnamon, vanilla, and flour.
  • Fold the apple mixture gently into the dough.
  • Shape into a loaf and proof for 1 to 2 hours, then refrigerate overnight.
  • Bake at 450°F in a preheated Dutch oven for 25 minutes covered and 20 to 25 minutes uncovered.
  • Cool completely before slicing and serving.
