Ingredients

2 cups grated sweet potato

1 cup grated zucchini, squeezed dry

1 large egg

1/2 cup breadcrumbs or panko

1/3 cup grated Parmesan cheese

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

1/2 teaspoon salt

1/4 teaspoon black pepper

1 tablespoon olive oil
Instructions

Preheat oven to 400°F and line a baking sheet with parchment paper.

Grate sweet potato and zucchini, then squeeze moisture from the zucchini.

Combine all ingredients in a large bowl and mix well.

Shape mixture into small tot shapes and place on baking sheet.

Lightly brush tops with olive oil.

Bake for 15 minutes, flip, then bake another 12 to 15 minutes until golden
