Description

This Beef Enchilada Casserole has all the bold Tex-Mex flavors you love baked into one cozy, cheesy dish. Perfect for busy nights when comfort food sounds just right.


Ingredients

  • 1 lb ground beef

  • 1 medium onion, diced

  • 2 cloves garlic, minced

  • 2 cups red enchilada sauce

  • 8 small corn tortillas, quartered

  • 2 cups shredded Mexican-blend cheese

  • 1 tsp chili powder

  • 1 tsp ground cumin

  • 1/2 tsp paprika

  • Salt and pepper to taste


Instructions

  • Preheat oven to 375°F and lightly grease a 9×13-inch baking dish.

  • Cook ground beef in a skillet over medium heat until browned, then drain excess fat.

  • Add onion and cook until soft, then stir in garlic and spices.

  • Mix in 1 cup enchilada sauce and remove from heat.

  • Layer sauce, tortillas, beef mixture, and cheese in the baking dish.

  • Repeat layers and finish with sauce and cheese on top.

  • Cover with foil and bake for 25 minutes, then uncover and bake 10 more minutes.

  • Rest for 10 minutes before serving.
