Ingredients

1 lb ground beef

1 medium onion, diced

2 cloves garlic, minced

2 cups red enchilada sauce

8 small corn tortillas, quartered

2 cups shredded Mexican-blend cheese

1 tsp chili powder

1 tsp ground cumin

1/2 tsp paprika

Salt and pepper to taste
Instructions

Preheat oven to 375°F and lightly grease a 9×13-inch baking dish.

Cook ground beef in a skillet over medium heat until browned, then drain excess fat.

Add onion and cook until soft, then stir in garlic and spices.

Mix in 1 cup enchilada sauce and remove from heat.

Layer sauce, tortillas, beef mixture, and cheese in the baking dish.

Repeat layers and finish with sauce and cheese on top.
