Description

Ingredients

  • 2 lbs beef chuck, cut into 1.5 inch cubes

  • 2 tbsp olive oil

  • 1 large onion, diced

  • 3 carrots, sliced

  • 3 celery stalks, chopped

  • 3 cloves garlic, minced

  • 3 tbsp all-purpose flour

  • 4 cups beef broth

  • 1 cup red wine (optional)

  • 2 tbsp tomato paste

  • 2 tsp dried thyme

  • 2 bay leaves

  • 3 medium potatoes, cubed

  • 1 cup frozen peas

  • Salt and pepper to taste


Instructions

  • Pat beef dry, season with salt and pepper.

  • Heat oil and brown beef in batches, then remove to a plate.

  • Add onions, carrots, and celery to the pot and cook until softened.

  • Stir in garlic, flour, and tomato paste.

  • Pour in wine, stir, and simmer briefly.

  • Add broth, thyme, bay leaves, and return beef to the pot.

  • Simmer on low for 1.5 to 2 hours.

  • Add potatoes and cook until tender.

  • Stir in peas, adjust seasoning, and serve.
