Ingredients

2 lbs beef chuck, cut into 1.5 inch cubes

2 tbsp olive oil

1 large onion, diced

3 carrots, sliced

3 celery stalks, chopped

3 cloves garlic, minced

3 tbsp all-purpose flour

4 cups beef broth

1 cup red wine (optional)

2 tbsp tomato paste

2 tsp dried thyme

2 bay leaves

3 medium potatoes, cubed

1 cup frozen peas

Salt and pepper to taste
Instructions

Pat beef dry, season with salt and pepper.

Heat oil and brown beef in batches, then remove to a plate.

Add onions, carrots, and celery to the pot and cook until softened.

Stir in garlic, flour, and tomato paste.

Pour in wine, stir, and simmer briefly.

Add broth, thyme, bay leaves, and return beef to the pot.

Simmer on low for 1.5 to 2 hours.
