Ingredients

4 boneless, skinless chicken breasts

2 tsp olive oil

Salt and freshly ground black pepper, to taste

1 cup fresh blueberries

2 tbsp honey

2 tsp fresh thyme leaves (or 1 tsp dried thyme)

1/4 cup chicken broth

1 tbsp balsamic vinegar

2 cloves garlic, minced

1 tbsp butter

Optional garnish: fresh thyme sprigs or lemon zest
Instructions

Pat the chicken dry and season with salt and pepper. Heat olive oil in a skillet and sear chicken 4-5 minutes per side until golden. Remove and set aside.

Reduce heat to medium, sauté garlic for 30 seconds, then add blueberries, honey, thyme, chicken broth, and balsamic vinegar. Cook 3-4 minutes until berries release juices.

Return chicken to skillet, spoon sauce over each piece, and simmer on low for 5-7 minutes until chicken reaches 165°F (74°C).
