Ingredients

  • 3 large eggs

  • 1 cup crushed pineapple with juice

  • 1 tsp vanilla extract

  • 1 can (14 oz) sweetened condensed milk

  • 1 cup coconut milk

  • 1 cup heavy whipping cream

  • ¼ cup powdered sugar

  • 1 ½ cups sweetened shredded coconut

  • 1 cup whipped topping

  • ½ cup crushed pineapple, drained


Instructions

  • Preheat oven to 350°F (175°C) and grease a 9×13 inch baking dish.

  • In a bowl, whisk flour, sugar, baking powder, and salt.

  • Add eggs, oil, crushed pineapple with juice, and vanilla extract. Mix until smooth.

  • Pour batter into the baking dish and bake for 30–35 minutes until a toothpick comes out clean.

  • In a bowl, whisk sweetened condensed milk with coconut milk.

  • Poke holes across the warm cake using a fork. Slowly pour the coconut mixture over the cake so it absorbs.

  • Whip heavy cream with powdered sugar until soft peaks form. Fold in crushed pineapple.

  • Spread whipped topping mixture over the cooled cake.

  • Sprinkle shredded coconut evenly over the top.

  • Refrigerate for at least 2 hours before slicing and serving.
