2 cups all-purpose flour

½ cup vegetable oil

1 cup crushed pineapple with juice

1 can (14 oz) sweetened condensed milk

1 cup coconut milk

1 cup heavy whipping cream

¼ cup powdered sugar

1 ½ cups sweetened shredded coconut

1 cup whipped topping

½ cup crushed pineapple, drained
Instructions

Preheat oven to 350°F (175°C) and grease a 9×13 inch baking dish.

In a bowl, whisk flour, sugar, baking powder, and salt.

Add eggs, oil, crushed pineapple with juice, and vanilla extract. Mix until smooth.

Pour batter into the baking dish and bake for 30–35 minutes until a toothpick comes out clean.

In a bowl, whisk sweetened condensed milk with coconut milk.

Poke holes across the warm cake using a fork. Slowly pour the coconut mixture over the cake so it absorbs.

Whip heavy cream with powdered sugar until soft peaks form. Fold in crushed pineapple.

Spread whipped topping mixture over the cooled cake.

Sprinkle shredded coconut evenly over the top.
