Ingredients

  • 2 cups fresh blackberries, washed and patted dry

  • 1/4 cup granulated sugar

  • 1 tbsp lemon juice, freshly squeezed

  • 1 tsp lemon zest

  • 1 1/2 cups heavy cream, cold

  • 1/4 cup powdered sugar

  • 1 tsp pure vanilla extract

  • 1 tsp gelatin powder (or agar-agar for vegetarian option)

  • 2 tbsp cold water to bloom gelatin

  • Optional: fresh mint leaves or extra berries for garnish


Instructions

  • Prepare the blackberry puree by cooking berries with sugar and lemon juice, then blend and strain.

  • Bloom the gelatin in cold water, then dissolve gently in warm water. Stir into the cooled blackberry puree.

  • Whip the heavy cream with powdered sugar and vanilla until soft peaks form.

  • Fold the blackberry puree into the whipped cream using gentle motions.

  • Spoon mousse into serving glasses and refrigerate 2–3 hours or overnight.

  • Garnish with fresh blackberries, mint, or lemon zest before serving
