Ingredients

2 cups fresh blackberries, washed and patted dry

1/4 cup granulated sugar

1 tbsp lemon juice, freshly squeezed

1 1/2 cups heavy cream, cold

1/4 cup powdered sugar

1 tsp pure vanilla extract

1 tsp gelatin powder (or agar-agar for vegetarian option)

2 tbsp cold water to bloom gelatin

Instructions

Prepare the blackberry puree by cooking berries with sugar and lemon juice, then blend and strain.

Bloom the gelatin in cold water, then dissolve gently in warm water. Stir into the cooled blackberry puree.

Whip the heavy cream with powdered sugar and vanilla until soft peaks form.
