Description

You will fall in love with these bakery-style blackberry macarons. Crisp shells, creamy centers, and bold berry flavor make them impossible to resist.


Ingredients

  • 100 g almond flour, finely ground

  • 100 g powdered sugar

  • 70 g egg whites, room temperature

  • 90 g granulated sugar

  • 1/4 tsp cream of tartar

  • Purple or pink gel food coloring, optional

  • 1/2 cup unsalted butter, softened

  • 1 1/2 cups powdered sugar for filling

  • 1/4 cup blackberry puree, reduced

  • 1/2 tsp vanilla extract


Instructions

  1. Line baking sheets with parchment paper and prepare a piping bag with a round tip.

  2. Sift almond flour and powdered sugar together twice into a bowl.

  3. Beat egg whites with cream of tartar until foamy, then add granulated sugar and whip to stiff peaks.

  4. Fold dry ingredients into the meringue until the batter flows slowly.

  5. Pipe small circles onto baking sheets and tap to remove air bubbles.

  6. Rest shells until dry to the touch, about 30 to 45 minutes.

  7. Bake at 300°F (150°C) for 14 to 16 minutes and cool completely.

  8. Beat butter, powdered sugar, blackberry puree, and vanilla until smooth.

  9. Pipe filling onto shells, sandwich, and chill before serving.
