Ingredients

  • 2 cups almond milk or milk of choice

  • 1/2 cup chia seeds

  • 1 cup blueberries (fresh or thawed frozen)

  • 2 tbsp maple syrup or honey

  • 1 tsp vanilla extract

  • 1/4 tsp cinnamon (optional)

  • 1/2 cup Greek yogurt or coconut yogurt (optional)

  • 1 tbsp lemon juice

  • Pinch of salt


Instructions

  • Mash half of the blueberries in a bowl until they form a thick puree.

  • In a mixing bowl or jar, whisk together almond milk, maple syrup, vanilla extract, lemon juice, cinnamon, and salt.

  • Add chia seeds and whisk for about 30 seconds to distribute them evenly.

  • Stir in the mashed blueberries and the remaining whole berries.

  • Let the mixture sit for 10 minutes, then stir again to prevent clumping.

  • Cover and refrigerate for at least 2 hours or overnight until thick.

  • Stir in yogurt if desired for extra creaminess.

  • Serve in bowls or jars and top with additional blueberries or your favorite toppings.
