Ingredients

  • 4 large egg whites
  • 1 cup granulated sugar
  • 1 teaspoon cornstarch
  • 1 teaspoon white vinegar
  • 1 teaspoon vanilla extract
  • 1 cup heavy whipping cream
  • 2 tablespoons powdered sugar
  • 1/2 teaspoon vanilla extract
  • 2 cups fresh blueberries
  • 2 tablespoons blueberry jam
  • 1 teaspoon lemon juice
  • Fresh mint leaves

Instructions

  • Preheat oven to 250°F and line a baking sheet with parchment paper.
  • Beat egg whites until soft peaks form.
  • Gradually add sugar and beat until stiff, glossy peaks form.
  • Fold in cornstarch, vinegar, and vanilla.
  • Shape into an 8-inch round with a shallow center.
  • Bake for 75 to 90 minutes.
  • Cool in the oven with the door slightly open.
  • Whip cream with powdered sugar and vanilla.
  • Toss blueberries with lemon juice and jam.
  • Top cooled pavlova with whipped cream and blueberries.
  • Serve immediately.
