- 2 cups fresh blueberries
- 3/4 cup granulated sugar
- 1 tablespoon lemon juice
- 1 teaspoon lemon zest (optional)
- 2 tablespoons water
Instructions
- Wash blueberries and remove any stems.
- Add blueberries, sugar, and water to a saucepan and heat over medium heat.
- Stir and mash some of the blueberries as they soften.
- Reduce heat and let the mixture simmer gently.
- Add lemon juice and zest, then continue cooking while stirring.
- Simmer until the mixture thickens and coats the back of a spoon.
- Test doneness using a chilled plate method.
- Remove from heat, cool slightly, and transfer to jars.
