12 oz cheese tortellini

8 oz broccolini, trimmed and halved

1 cup cherry tomatoes, halved

1/3 cup shaved Parmesan cheese

1/4 cup toasted pine nuts

2 tablespoons extra virgin olive oil

1 tablespoon fresh lemon juice

1 teaspoon lemon zest

1 small garlic clove, minced

1/2 teaspoon kosher salt

1/4 teaspoon black pepper

2 tablespoons chopped fresh basil
Instructions

Bring a large pot of salted water to a boil and cook tortellini until al dente. Drain and set aside.

In the same pot, blanch broccolini for 2 to 3 minutes until bright green. Transfer to ice water, then drain.

Whisk olive oil, lemon juice, lemon zest, garlic, salt, and pepper in a small bowl.

Combine tortellini, broccolini, and tomatoes in a large bowl. Pour dressing over and toss gently.
