1 cup (227 g) unsalted butter

2 cups (400 g) brown sugar, packed

2 large eggs

1 teaspoon pure vanilla extract

2 ½ cups (315 g) all-purpose flour

2 teaspoons instant coffee granules

1 teaspoon baking soda

½ teaspoon salt

1 ½ cups (225 g) toffee bits

Optional: ½ cup (60 g) chopped walnuts or pecans
Instructions

Brown the butter in a medium saucepan over medium heat until golden and nutty. Let cool slightly.

Whisk brown sugar, eggs, and vanilla in a large bowl. Gradually stir in the browned butter.

In another bowl, sift together flour, coffee granules, baking soda, and salt. Fold into wet mixture.

Stir in toffee bits and optional nuts. Chill dough for 30–60 minutes.

Preheat oven to 350°F (175°C) and line baking sheets.

Scoop 2-tablespoon dough balls onto sheets, spacing 2 inches apart.
