Ingredients

1 lb. boneless, skinless chicken breasts, diced

1 cup uncooked long-grain white rice

2 cups chicken broth

3/4 cup buffalo sauce

1/2 cup ranch dressing

1 cup shredded cheddar cheese

1/2 cup shredded mozzarella cheese

1 tablespoon olive oil

1 teaspoon garlic powder

1/2 teaspoon smoked paprika

Salt and black pepper to taste
Instructions

Preheat oven to 375°F (190°C) and grease a 9×13-inch baking dish.

Toss chicken with olive oil, garlic powder, smoked paprika, salt, and pepper.

Add rice, chicken broth, buffalo sauce, and ranch dressing, then stir well.

Mix in half of the shredded cheeses.

Spread mixture evenly in the baking dish and cover tightly with foil.

Bake for 35 minutes, then remove foil and top with remaining cheese.
