Buffalo flavor meets cozy comfort in one bubbly, cheesy bake. This is the kind of dinner everyone asks for again.


Ingredients

  • 1 lb. boneless, skinless chicken breasts, diced

  • 1 cup uncooked long-grain white rice

  • 2 cups chicken broth

  • 3/4 cup buffalo sauce

  • 1/2 cup ranch dressing

  • 1 cup shredded cheddar cheese

  • 1/2 cup shredded mozzarella cheese

  • 1 tablespoon olive oil

  • 1 teaspoon garlic powder

  • 1/2 teaspoon smoked paprika

  • Salt and black pepper to taste


Instructions

  • Preheat oven to 375°F (190°C) and grease a 9×13-inch baking dish.

  • Toss chicken with olive oil, garlic powder, smoked paprika, salt, and pepper.

  • Add rice, chicken broth, buffalo sauce, and ranch dressing, then stir well.

  • Mix in half of the shredded cheeses.

  • Spread mixture evenly in the baking dish and cover tightly with foil.

  • Bake for 35 minutes, then remove foil and top with remaining cheese.

  • Bake uncovered for 15 to 20 minutes until bubbly and golden.

  • Rest for 5 minutes before serving.
