Description

Ingredients

  • 1 cup fresh mint leaves, finely chopped

  • 2 tablespoons fresh lemon juice

  • 3 tablespoons extra virgin olive oil

  • 1 small garlic clove, minced

  • 1/2 teaspoon salt

  • 1/4 teaspoon black pepper

  • 1/2 teaspoon ground cumin (optional)


Instructions

  • Peel and grate the carrots, then place them in a large bowl.

  • Finely chop the mint leaves and set aside.

  • Whisk lemon juice, olive oil, garlic, salt, pepper, and cumin in a small bowl.

  • Pour the dressing over the carrots and toss gently to coat.
