- 4 large flour tortillas
- 2 ripe avocados
- 1 1/2 cups shredded cheddar cheese
- 1 cup shredded mozzarella or Monterey Jack cheese
- 1 tablespoon unsalted butter
- 1 tablespoon olive oil
- 1 small red onion, thinly sliced
- 1 small tomato, diced
- 1 tablespoon chopped cilantro
- 1 teaspoon lime juice
- 1/2 teaspoon garlic powder
- 1/2 teaspoon chili flakes
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Slice the avocados and toss with lime juice, salt, pepper, garlic powder, and chili flakes.
- Mix the shredded cheeses in a bowl.
- Heat butter and olive oil in a skillet over medium heat.
- Place cheese, avocado, tomato, and onion on one half of each tortilla.
- Fold each tortilla in half.
- Cook for 2 to 3 minutes per side until golden and crispy.
- Slice into wedges and serve warm.
