- 1 lb. chicken breast, diced
- 1 tbsp olive oil
- 1 tsp chili powder
- 1 tsp cumin
- 1 tsp smoked paprika
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1/2 tsp salt
- 1/4 tsp black pepper
- 2 cups cooked rice
- 1 cup black beans
- 1 cup corn kernels
- 1 cup cherry tomatoes, halved
- 1 avocado, sliced
- 1 cup shredded romaine lettuce
- 1/2 cup shredded cheddar cheese
- 1/4 cup sour cream
- 1/4 cup salsa
- 1 tbsp lime juice
- 2 tbsp chopped cilantro
Instructions
- Toss diced chicken with olive oil and all seasonings.
- Cook chicken in a skillet over medium-high heat for 6 to 8 minutes until fully cooked.
- Warm the cooked rice and mix with lime juice and cilantro.
- Heat black beans and corn in a small pan until warm.
- Divide rice into serving bowls.
- Top with cooked chicken, beans, and corn.
- Add tomatoes, avocado, lettuce, cheese, salsa, and sour cream.
- Garnish with cilantro and serve immediately.
