Ingredients

  • 1 lb. chicken breast, diced
  • 1 tbsp olive oil
  • 1 tsp chili powder
  • 1 tsp cumin
  • 1 tsp smoked paprika
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 cups cooked rice
  • 1 cup black beans
  • 1 cup corn kernels
  • 1 cup cherry tomatoes, halved
  • 1 avocado, sliced
  • 1 cup shredded romaine lettuce
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup sour cream
  • 1/4 cup salsa
  • 1 tbsp lime juice
  • 2 tbsp chopped cilantro

Instructions

  • Toss diced chicken with olive oil and all seasonings.
  • Cook chicken in a skillet over medium-high heat for 6 to 8 minutes until fully cooked.
  • Warm the cooked rice and mix with lime juice and cilantro.
  • Heat black beans and corn in a small pan until warm.
  • Divide rice into serving bowls.
  • Top with cooked chicken, beans, and corn.
  • Add tomatoes, avocado, lettuce, cheese, salsa, and sour cream.
  • Garnish with cilantro and serve immediately.
