Description

Ingredients

  • 2 heads romaine lettuce, chopped

  • 1 cup croutons, toasted

  • ½ cup freshly grated Parmesan cheese

  • 2 large egg yolks, room temperature

  • 3 cloves garlic, minced

  • 2 anchovy fillets, mashed (optional)

  • 2 tablespoons fresh lemon juice

  • 1 teaspoon Dijon mustard

  • ½ teaspoon Worcestershire sauce

  • ½ cup extra-virgin olive oil

  • Salt and freshly ground black pepper to taste


Instructions

  • In a medium bowl, whisk egg yolks, garlic, anchovies, lemon juice, Dijon mustard, and Worcestershire sauce until smooth.

  • Slowly drizzle in olive oil while whisking to create a creamy dressing. Season with salt and pepper.

  • Chop romaine lettuce and place in a large bowl. Add croutons and toss gently.

  • Pour dressing over the salad in increments, tossing gently. Add Parmesan and mix evenly.

  • Transfer to serving plates, sprinkle extra Parmesan and cracked black pepper, and serve immediately.
