1 cup fine yellow cornmeal

2 cups whole milk

4 tablespoons unsalted butter, plus extra for greasing

1/2 teaspoon black pepper

3 large eggs, separated

1/2 teaspoon baking powder

1/4 cup shredded cheddar cheese (optional)
Instructions

In a medium saucepan, combine cornmeal, milk, butter, salt, and sugar. Cook over medium heat, stirring constantly until thickened. Remove from heat and cool slightly.

Separate eggs. Beat yolks and stir into cooled cornmeal mixture. Fold in cheese if using.

Beat egg whites with a pinch of salt until stiff peaks form.

Gently fold egg whites into cornmeal mixture to maintain airiness.

Preheat oven to 375°F (190°C). Grease a 1.5-quart baking dish with butter and preheat for 5 minutes.

Pour mixture into hot dish. Bake 30–35 minutes until golden and a knife comes out clean.
