Description

Ingredients

  • 1 cup fine yellow cornmeal

  • 2 cups whole milk

  • 4 tablespoons unsalted butter, plus extra for greasing

  • 1 teaspoon salt

  • 1/2 teaspoon black pepper

  • 1 tablespoon sugar (optional)

  • 3 large eggs, separated

  • 1/2 teaspoon baking powder

  • 1/4 cup shredded cheddar cheese (optional)


Instructions

  • In a medium saucepan, combine cornmeal, milk, butter, salt, and sugar. Cook over medium heat, stirring constantly until thickened. Remove from heat and cool slightly.

  • Separate eggs. Beat yolks and stir into cooled cornmeal mixture. Fold in cheese if using.

  • Beat egg whites with a pinch of salt until stiff peaks form.

  • Gently fold egg whites into cornmeal mixture to maintain airiness.

  • Preheat oven to 375°F (190°C). Grease a 1.5-quart baking dish with butter and preheat for 5 minutes.

  • Pour mixture into hot dish. Bake 30–35 minutes until golden and a knife comes out clean.

  • Cool 5–10 minutes and serve warm.
