Ingredients

2 lbs. pumpkin, peeled, seeded, and cubed

1 medium onion, finely chopped

4 cups vegetable or chicken broth

1 cup heavy cream or coconut milk

1 tsp ground nutmeg

1/2 tsp ground cinnamon

Instructions

Preheat oven to 400°F (200°C) and roast pumpkin cubes with olive oil, salt, and nutmeg for 25–30 minutes.
