Ingredients

  • 2 lbs. pumpkin, peeled, seeded, and cubed

  • 1 medium onion, finely chopped

  • 3 cloves garlic, minced

  • 4 cups vegetable or chicken broth

  • 1 cup heavy cream or coconut milk

  • 2 tbsp olive oil

  • 1 tsp ground nutmeg

  • 1/2 tsp ground cinnamon

  • Salt and freshly ground black pepper, to taste

  • 4 slices of freshly baked fluffy bread

  • Optional garnish: pumpkin seeds, fresh parsley, or a drizzle of cream


Instructions

  • Preheat oven to 400°F (200°C) and roast pumpkin cubes with olive oil, salt, and nutmeg for 25–30 minutes.

  • Sauté chopped onions in olive oil until translucent, then add garlic and cook until fragrant.

  • Add roasted pumpkin, broth, cinnamon, salt, and pepper. Simmer for 15–20 minutes.

  • Blend soup until smooth, then stir in cream or coconut milk. Adjust seasoning as needed.

  • Warm or bake fluffy bread slices.

  • Serve soup hot with a slice of bread and optional garnishes.
