Ingredients

1 whole duck about 5 lb or 2.3 kg

1 tbsp kosher salt

1 tsp five spice powder

12 cups chicken or duck stock

2 inches fresh ginger sliced

4 scallions smashed

2 cloves garlic crushed

24 wonton wrappers

8 oz ground pork or chicken

1 tbsp soy sauce

1 tsp sesame oil

1 cup bok choy chopped
Instructions

Preheat oven to 375°F and season duck with salt and five spice.

Roast duck for about 90 minutes until skin is crisp and golden, then rest and slice.

Simmer stock with ginger, scallions, and garlic for 30 minutes.

Mix ground meat with soy sauce and sesame oil.

Fill and seal wonton wrappers with one teaspoon of filling each.

Cook wontons in simmering broth until they float.

Add bok choy and cook briefly.
