Description

Ingredients

  • 2 cups cottage cheese

  • 1 cup shredded mozzarella cheese

  • 2 large eggs

  • 1 tablespoon olive oil

  • 1 small onion, diced

  • 2 cloves garlic, minced

  • 1 cup bell peppers, diced

  • 1 cup zucchini, sliced

  • 1 cup fresh spinach

  • 1/2 teaspoon salt

  • 1/4 teaspoon black pepper

  • 1/2 teaspoon Italian seasoning


Instructions

  • Preheat oven to 375°F and grease a baking dish.

  • Sauté onion in olive oil until soft, then add garlic.

  • Add vegetables and cook until tender and moisture evaporates.

  • Whisk eggs with cottage cheese, seasoning, and half the mozzarella.

  • Fold vegetables into the mixture.

  • Transfer to baking dish and top with remaining cheese.

  • Bake for 35 to 40 minutes until golden and set.

  • Rest for 10 minutes before slicing and serving.
