1 cup (120g) almond flour, finely ground

1 ¾ cups (210g) powdered sugar

½ tsp cream of tartar

½ tsp vanilla extract

Pink, blue, or purple gel food coloring (optional)

¾ cup (170g) unsalted butter, softened

1 ½ cups (180g) powdered sugar

2 tbsp milk or heavy cream

1 tsp cotton candy flavoring
Instructions

Sift almond flour and powdered sugar together into a large bowl.

Beat egg whites until frothy, add cream of tartar, then granulated sugar until stiff peaks form.

Add vanilla and food coloring to meringue, fold gently.

Fold in almond flour mixture until batter flows like lava.

Pipe circles onto parchment-lined sheet, tap to release air bubbles.

Let shells rest 30–60 minutes until skins form.
