Ingredients

  • 1 ¾ cups (210g) powdered sugar

  • 3 large egg whites, room temperature

  • ¼ cup (50g) granulated sugar

  • ½ tsp cream of tartar

  • ½ tsp vanilla extract

  • Pink, blue, or purple gel food coloring (optional)

  • ¾ cup (170g) unsalted butter, softened

  • 1 ½ cups (180g) powdered sugar

  • 2 tbsp milk or heavy cream

  • 1 tsp cotton candy flavoring


Instructions

  • Sift almond flour and powdered sugar together into a large bowl.

  • Beat egg whites until frothy, add cream of tartar, then granulated sugar until stiff peaks form.

  • Add vanilla and food coloring to meringue, fold gently.

  • Fold in almond flour mixture until batter flows like lava.

  • Pipe circles onto parchment-lined sheet, tap to release air bubbles.

  • Let shells rest 30–60 minutes until skins form.

  • Preheat oven to 300°F (150°C) and bake 15–18 minutes, rotating tray halfway.

  • Beat butter, then add powdered sugar, milk, and cotton candy flavoring until fluffy.

  • Pair shells, pipe filling, and sandwich together.

  • Refrigerate for 2 hours before serving.
