Ingredients

4 medium sweet potatoes, scrubbed and dried

8 oz. Brie cheese, sliced or cubed

1/2 cup cranberry sauce

2 tbsp unsalted butter, melted

1 tbsp olive oil

1/2 tsp salt

1/4 tsp black pepper

1/4 tsp cinnamon (optional)

2 tbsp chopped fresh parsley
Instructions

Preheat oven to 400°F (200°C) and line a baking sheet with foil.

Prick sweet potatoes with a fork, brush with olive oil, and sprinkle with salt and pepper.

Roast sweet potatoes for 45–55 minutes until tender.

Slice or cube brie and warm cranberry sauce if desired.

Slice roasted sweet potatoes lengthwise, mash interior slightly, and create a pocket.

Stuff each potato with brie and top with cranberry sauce, then bake 5–7 minutes until brie melts.
