Ingredients

2 cups all-purpose flour

1 tsp baking powder

1/2 cup unsalted butter, softened

1 cup granulated sugar

2 large eggs

1/2 cup plain Greek yogurt or sour cream

1/4 cup fresh orange juice

2 tsp orange zest

1 tsp vanilla extract

1 1/2 cups fresh or frozen cranberries

Optional: 2 tbsp coarse sugar or orange glaze
Instructions

Preheat oven to 350°F (175°C). Grease and flour a 9×5-inch loaf pan or line with parchment paper.

Whisk together flour, baking powder, baking soda, and salt. Set aside.

Beat butter and sugar until light and fluffy.

Add eggs one at a time, then stir in yogurt, orange juice, zest, and vanilla extract.

Fold dry ingredients into wet ingredients until just combined.

Toss cranberries with a teaspoon of flour and fold into batter.

Pour batter into prepared pan, smooth the top, and sprinkle with sugar or glaze if desired.

Bake 55–65 minutes or until a toothpick comes out clean.
