Ingredients

  • 2 cups all-purpose flour

  • 1 tsp baking powder

  • 1/2 tsp baking soda

  • 1/4 tsp salt

  • 1/2 cup unsalted butter, softened

  • 1 cup granulated sugar

  • 2 large eggs

  • 1/2 cup plain Greek yogurt or sour cream

  • 1/4 cup fresh orange juice

  • 2 tsp orange zest

  • 1 tsp vanilla extract

  • 1 1/2 cups fresh or frozen cranberries

  • Optional: 2 tbsp coarse sugar or orange glaze


Instructions

  • Preheat oven to 350°F (175°C). Grease and flour a 9×5-inch loaf pan or line with parchment paper.

  • Whisk together flour, baking powder, baking soda, and salt. Set aside.

  • Beat butter and sugar until light and fluffy.

  • Add eggs one at a time, then stir in yogurt, orange juice, zest, and vanilla extract.

  • Fold dry ingredients into wet ingredients until just combined.

  • Toss cranberries with a teaspoon of flour and fold into batter.

  • Pour batter into prepared pan, smooth the top, and sprinkle with sugar or glaze if desired.

  • Bake 55–65 minutes or until a toothpick comes out clean.

  • Cool in the pan for 10 minutes, then transfer to a wire rack. Slice and serve warm or at room temperature.
