Description

Ingredients

  • 12 oz elbow macaroni

  • 4 tbsp unsalted butter

  • 1/4 cup all-purpose flour

  • 3 cups whole milk

  • 1 cup heavy cream

  • 2 cups sharp cheddar cheese, grated

  • 1 cup mozzarella or Monterey Jack, grated

  • 1/2 cup Parmesan cheese, grated

  • 1 tsp salt

  • 1/2 tsp black pepper

  • 1/2 tsp smoked paprika or mustard powder

  • 1 cup breadcrumbs mixed with 1 tbsp melted butter


Instructions

  • Preheat oven to 375°F and grease a baking dish. Cook macaroni until just al dente and drain.

  • Melt butter in a saucepan, whisk in flour, and cook briefly.

  • Slowly whisk in milk and cream until thick and smooth.

  • Add cheeses gradually, stirring until melted. Season to taste.

  • Stir macaroni into sauce and transfer to baking dish.

  • Top with breadcrumbs and bake until golden and bubbly.
