Ingredients

12 oz elbow macaroni

4 tbsp unsalted butter

1/4 cup all-purpose flour

3 cups whole milk

1 cup heavy cream

2 cups sharp cheddar cheese, grated

1 cup mozzarella or Monterey Jack, grated

1/2 cup Parmesan cheese, grated

1 tsp salt

1/2 tsp black pepper

1/2 tsp smoked paprika or mustard powder

1 cup breadcrumbs mixed with 1 tbsp melted butter
Instructions

Preheat oven to 375°F and grease a baking dish. Cook macaroni until just al dente and drain.

Melt butter in a saucepan, whisk in flour, and cook briefly.

Slowly whisk in milk and cream until thick and smooth.

Add cheeses gradually, stirring until melted. Season to taste.

Stir macaroni into sauce and transfer to baking dish.
