Ingredients

  • 12 oz pasta such as fettuccine, linguine, or penne

  • 3 large yellow onions, thinly sliced

  • 2 tbsp olive oil

  • 2 tbsp unsalted butter

  • 3 cloves garlic, minced

  • 1 cup heavy cream

  • 3/4 cup freshly grated Parmesan cheese, plus more for serving

  • 1/2 cup reserved pasta water

  • 1/2 tsp salt, or to taste

  • 1/4 tsp black pepper

  • Optional red pepper flakes


Instructions

  1. Cook pasta in salted water until al dente. Reserve pasta water, then drain.

  2. Heat olive oil and butter in a skillet. Add onions and cook slowly until caramelized.

  3. Stir in garlic and cook briefly until fragrant.

  4. Add cream and simmer until slightly thickened.

  5. Stir in Parmesan cheese off the heat until smooth.

  6. Add pasta and pasta water as needed, tossing to coat evenly.

  7. Season, garnish with extra cheese, and serve warm.
