Description

Indulge in creamy, cheesy comfort with this Creamy Cheesesteak Tortellini. Tender steak, melty cheese, and savory veggies make every bite unforgettable.


Ingredients

  • 1 lb. cheese tortellini, fresh or frozen

  • 1 lb. ribeye steak, thinly sliced

  • 2 tbsp olive oil

  • 1 medium yellow onion, thinly sliced

  • 1 red bell pepper, thinly sliced

  • 1 green bell pepper, thinly sliced

  • 3 cloves garlic, minced

  • 1 cup heavy cream

  • ½ cup chicken broth

  • 1 cup shredded provolone cheese

  • ¼ cup grated Parmesan cheese

  • 1 tsp salt

  • ½ tsp black pepper

  • ½ tsp crushed red pepper flakes (optional)

  • Fresh parsley, chopped, for garnish


Instructions

  • Cook tortellini according to package instructions, then drain and set aside.

  • Heat 1 tbsp olive oil in a skillet over medium-high heat and cook steak 2–3 minutes per side until browned. Remove and set aside.

  • Add remaining olive oil to the skillet and sauté onions and peppers for 5–7 minutes. Add garlic during the last minute.

  • Reduce heat to medium-low and pour in heavy cream and chicken broth. Simmer 3–4 minutes until slightly thickened. Season with salt, pepper, and optional red pepper flakes.

  • Return steak to skillet and stir in cooked tortellini, tossing gently. Add reserved pasta water if needed.

  • Remove skillet from heat and stir in provolone and Parmesan until melted and creamy.

  • Serve immediately, garnished with chopped parsley and extra Parmesan if desired.

Notes

Let steak rest for a few minutes after searing to keep it juicy before adding it back.

Use refrigerated tortellini for a quick cook and creamy finish.
