Ingredients

1 lb. cheese tortellini, fresh or frozen

1 lb. ribeye steak, thinly sliced

2 tbsp olive oil

1 medium yellow onion, thinly sliced

1 red bell pepper, thinly sliced

1 green bell pepper, thinly sliced

3 cloves garlic, minced
-
1 cup heavy cream
-
½ cup chicken broth
-
1 cup shredded provolone cheese

¼ cup grated Parmesan cheese
-
1 tsp salt
-
½ tsp black pepper
-
½ tsp crushed red pepper flakes (optional)

Fresh parsley, chopped, for garnish
Instructions

Cook tortellini according to package instructions, then drain and set aside.

Heat 1 tbsp olive oil in a skillet over medium-high heat and cook steak 2–3 minutes per side until browned. Remove and set aside.

Add remaining olive oil to the skillet and sauté onions and peppers for 5–7 minutes. Add garlic during the last minute.

Reduce heat to medium-low and pour in heavy cream and chicken broth. Simmer 3–4 minutes until slightly thickened. Season with salt, pepper, and optional red pepper flakes.

Return steak to skillet and stir in cooked tortellini, tossing gently. Add reserved pasta water if needed.

Remove skillet from heat and stir in provolone and Parmesan until melted and creamy.

Serve immediately, garnished with chopped parsley and extra Parmesan if desired.
Notes
Let steak rest for a few minutes after searing to keep it juicy before adding it back.
Use refrigerated tortellini for a quick cook and creamy finish.
