Ingredients

  • 8 oz. pasta shells or penne
  • 1 tbsp olive oil
  • 1 small yellow onion, diced
  • 3 garlic cloves, minced
  • 2 cups beef broth
  • 1 cup milk
  • 1 cup Greek yogurt
  • 1 1/2 cups shredded cheddar cheese
  • 1/2 cup grated Parmesan cheese
  • 1 tsp paprika
  • 1 tsp Italian seasoning
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1 tbsp tomato paste
  • Fresh parsley

Instructions

  • Heat olive oil in a large pot and sauté onion until softened.
  • Add ground beef and cook until browned.
  • Stir in garlic, seasoning, and tomato paste.
  • Pour in broth and milk.
  • Add uncooked pasta and simmer until tender.
  • Lower heat and mix in Greek yogurt.
  • Stir in cheddar and Parmesan until melted.
  • Let thicken for 2 minutes.
  • Garnish with parsley and serve hot.
