- 1 lb. lean ground beef
- 8 oz. pasta shells or penne
- 1 tbsp olive oil
- 1 small yellow onion, diced
- 3 garlic cloves, minced
- 2 cups beef broth
- 1 cup milk
- 1 cup Greek yogurt
- 1 1/2 cups shredded cheddar cheese
- 1/2 cup grated Parmesan cheese
- 1 tsp paprika
- 1 tsp Italian seasoning
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1 tbsp tomato paste
- Fresh parsley
Instructions
- Heat olive oil in a large pot and sauté onion until softened.
- Add ground beef and cook until browned.
- Stir in garlic, seasoning, and tomato paste.
- Pour in broth and milk.
- Add uncooked pasta and simmer until tender.
- Lower heat and mix in Greek yogurt.
- Stir in cheddar and Parmesan until melted.
- Let thicken for 2 minutes.
- Garnish with parsley and serve hot.
