This creamy spinach is not your usual side. One spoonful of green curry goodness and you will want it on everything.
Ingredients

1 lb fresh spinach, washed and chopped

1 tbsp olive oil or butter

3 cloves garlic, minced

1 small shallot, finely diced

1½ tbsp green curry paste

½ cup heavy cream
-
½ cup full-fat coconut milk
-
¼ cup grated Parmesan cheese

½ tsp salt
-
¼ tsp black pepper

1 tsp fresh lime juice
Instructions

Heat olive oil or butter in a skillet over medium heat and sauté garlic and shallot until fragrant.

Stir in green curry paste and cook briefly to release aroma.

Add heavy cream and coconut milk, stirring until smooth and gently simmering.

Add spinach in batches, folding until fully wilted and coated.

Stir in Parmesan, salt, and black pepper, then cook until creamy.

Finish with lime juice, adjust seasoning, and serve warm.
