Ingredients

  • 1 tbsp olive oil

  • 1 medium yellow onion, diced

  • 3 cloves garlic, minced

  • lb. fresh mushrooms, sliced

  • 1 tsp fresh thyme

  • 3 tbsp all-purpose flour

  • 4 cups vegetable or chicken broth

  • 1 cup heavy cream

  • ½ tsp salt

  • ¼ tsp black pepper

  • 1 tbsp fresh parsley, chopped


Instructions

  • Heat butter and olive oil in a large pot over medium heat.

  • Add diced onion and cook until soft, then stir in garlic.

  • Add mushrooms and thyme, cooking until browned.

  • Sprinkle flour over mushrooms and stir well.

  • Gradually add broth while stirring and bring to a gentle simmer.

  • Cook until slightly thickened, then stir in heavy cream.

  • Season with salt and pepper, garnish with parsley, and serve warm
