Ingredients

  • 1 lb. fresh cremini or button mushrooms, sliced

  • 2 tbsp unsalted butter

  • 1 tbsp olive oil

  • 1 medium yellow onion, finely chopped

  • 3 garlic cloves, minced

  • 2 tbsp all-purpose flour

  • 4 cups vegetable or chicken broth

  • 1 cup heavy cream

  • 1/2 tsp dried thyme

  • 1/2 tsp salt

  • 1/4 tsp black pepper

  • 1 tbsp fresh parsley, chopped


Instructions

  • Heat butter and olive oil in a large pot over medium heat. Add onion and cook until soft.

  • Stir in garlic and cook briefly until fragrant.

  • Add mushrooms and thyme. Cook until browned and tender.

  • Sprinkle flour over mushrooms and stir for 1 minute.

  • Gradually pour in broth while stirring. Bring to a simmer.

  • Simmer for 10–12 minutes until slightly thickened.

  • Blend until smooth or leave partially chunky, based on preference.

  • Stir in heavy cream, salt, and pepper. Simmer briefly.

  • Serve hot and garnish with fresh parsley.
