Ingredients

1 lb. fresh cremini or button mushrooms, sliced

2 tbsp unsalted butter

1 tbsp olive oil

1 medium yellow onion, finely chopped

3 garlic cloves, minced

2 tbsp all-purpose flour

4 cups vegetable or chicken broth

1 cup heavy cream

1/2 tsp dried thyme

1/2 tsp salt

1/4 tsp black pepper

1 tbsp fresh parsley, chopped
Instructions

Heat butter and olive oil in a large pot over medium heat. Add onion and cook until soft.

Stir in garlic and cook briefly until fragrant.

Add mushrooms and thyme. Cook until browned and tender.

Sprinkle flour over mushrooms and stir for 1 minute.

Gradually pour in broth while stirring. Bring to a simmer.

Simmer for 10–12 minutes until slightly thickened.

Blend until smooth or leave partially chunky, based on preference.

Stir in heavy cream, salt, and pepper. Simmer briefly.
