Ingredients

1 lb. lean ground beef

1 packet taco seasoning

1/3 cup water

8 small flour tortillas

1 cup shredded cheddar cheese

1 cup shredded Monterey Jack cheese

1/2 cup salsa

1/2 cup diced tomatoes

1/4 cup chopped red onion

1/4 cup chopped fresh cilantro

1/2 cup sour cream
Instructions

Preheat oven to 375°F and grease a muffin tin.

Press tortillas into muffin cups and pre-bake for 5 minutes.

Brown ground beef in a skillet and stir in taco seasoning and water. Simmer until thick.

Spoon beef into tortilla cups, add salsa, and top with cheese.

Bake 8 to 10 minutes until cheese melts and edges turn golden.

Remove from oven, top with tomatoes, onion, cilantro, and sour cream.
