Ingredients

4 large sweet potatoes, peeled and cubed (about 2 lbs)

1/2 cup unsalted butter, melted

1/4 cup brown sugar, packed

1/2 teaspoon ground cinnamon

1/4 teaspoon ground nutmeg

1/4 teaspoon salt

1 teaspoon vanilla extract

1 cup mini marshmallows

Optional: 1/4 cup chopped pecans
Instructions

Peel and cube sweet potatoes, place in the crockpot, and drizzle with melted butter.

Sprinkle brown sugar, cinnamon, nutmeg, and salt over the potatoes, then gently stir.

Cover crockpot and cook on low for 5–6 hours or on high for 2–3 hours until tender.

Sprinkle mini marshmallows evenly on top and cover again. Cook an additional 15–20 minutes until melted and lightly golden.

Optionally, broil for 1–2 minutes for a toasted marshmallow finish.
