  • 4 large sweet potatoes, peeled and cubed (about 2 lbs)

  • 1/2 cup unsalted butter, melted

  • 1/4 cup brown sugar, packed

  • 1/2 teaspoon ground cinnamon

  • 1/4 teaspoon ground nutmeg

  • 1/4 teaspoon salt

  • 1 teaspoon vanilla extract

  • 1 cup mini marshmallows

  • Optional: 1/4 cup chopped pecans


Instructions

  • Peel and cube sweet potatoes, place in the crockpot, and drizzle with melted butter.

  • Sprinkle brown sugar, cinnamon, nutmeg, and salt over the potatoes, then gently stir.

  • Cover crockpot and cook on low for 5–6 hours or on high for 2–3 hours until tender.

  • Sprinkle mini marshmallows evenly on top and cover again. Cook an additional 15–20 minutes until melted and lightly golden.

  • Optionally, broil for 1–2 minutes for a toasted marshmallow finish.

  • Serve directly from the crockpot or scoop onto plates, optionally topping with chopped pecans.
