Ingredients

  • 45 lb. boneless turkey breast, trimmed of excess fat

  • 2 tbsp olive oil

  • 4 cloves garlic, minced

  • 1 tsp paprika

  • 1 tsp dried thyme

  • 1 tsp dried rosemary

  • 1 tsp salt

  • ½ tsp black pepper

  • 1 cup low-sodium chicken broth

  • 1 medium onion, quartered

  • 2 carrots, peeled and chopped

  • 2 celery stalks, chopped

  • Optional: 2 tbsp butter, for searing or basting


Instructions

  • Pat the turkey breast dry and rub with olive oil, garlic, paprika, thyme, rosemary, salt, and black pepper.

  • Place onions, carrots, and celery in the bottom of the crockpot and pour in chicken broth.

  • Set the turkey breast on top of the vegetables, add butter if desired, and cover.

  • Cook on low for 5–6 hours or high for 3–4 hours without lifting the lid.

  • Optional: Sear cooked turkey in a skillet for 2–3 minutes per side for a golden finish.

  • Remove turkey, let rest 10–15 minutes, then slice against the grain.

  • Serve with cooked vegetables and spoon crockpot juices over slices.
