Ingredients

1 lb chicken thighs or breasts, cut into bite-sized pieces

2 medium sweet potatoes, peeled and diced

2 tablespoons olive oil

1 medium yellow onion, sliced

3 cloves garlic, minced

1 teaspoon smoked paprika

1/2 teaspoon ground cumin

1/2 teaspoon dried thyme

Salt and black pepper to taste

1/2 teaspoon chili flakes optional

Fresh parsley for garnish
Instructions

Heat olive oil in a large skillet over medium-high heat and sear the chicken until golden, then remove and set aside.

Add sweet potatoes to the skillet and cook until lightly caramelized.

Stir in onion and cook until softened, then add garlic and spices.

Return chicken to the skillet, cover, and cook until chicken is done and potatoes are tender.
