2 cups cooked chicken, shredded or diced

3 medium potatoes, peeled and diced (about 1 lb.)

2 cups fresh broccoli florets

1 cup sour cream or Greek yogurt

1/2 cup milk

2 tbsp butter

1 small onion, finely chopped

2 cloves garlic, minced

1/2 tsp black pepper

1/2 tsp paprika

1/4 tsp dried thyme (optional)

1/2 cup breadcrumbs for topping (optional)
Instructions

Preheat oven to 375°F (190°C) and grease a 9×13-inch casserole dish.

Boil diced potatoes for 5–7 minutes until slightly tender; steam broccoli for 2–3 minutes.

Melt butter in a skillet, sauté onions and garlic until translucent, then remove from heat.

Combine sour cream, milk, salt, pepper, paprika, thyme, and sautéed onions and garlic in a bowl.

Layer casserole: sauce, potatoes, chicken, broccoli, and sauce. Repeat layers, top with cheese and breadcrumbs if desired.

Cover with foil, bake 25 minutes; remove foil and bake 15–20 minutes until golden and bubbly.
