Ingredients

1 lb. boneless skinless chicken thighs, cut into small pieces

1 cup buttermilk

1 cup all-purpose flour

1/2 cup cornstarch

1 tsp salt

1 tsp black pepper

1 tsp paprika

1/2 tsp garlic powder

1/2 tsp cayenne pepper (optional)

Vegetable oil for frying

1 1/2 cups all-purpose flour (for waffles)

1 tbsp sugar

1 tbsp baking powder

1/4 tsp salt

1 1/4 cups milk

1 large egg
-
1/4 cup melted butter

1/4 cup maple syrup

2 tbsp hot honey (optional)

12 mini waffles
Instructions

Marinate chicken in buttermilk for at least 2 hours in the refrigerator.

Mix waffle dry ingredients, combine with wet ingredients, and cook waffles in a preheated waffle iron until golden brown.

Combine flour, cornstarch, and seasonings for dredging.

Coat chicken pieces thoroughly, double dredging for extra crispiness.

Fry chicken in 350°F oil for 4 to 6 minutes until golden and cooked through.
