Ingredients

  • 2 cups dried black beans

  • 6 cups water or vegetable broth

  • 2 tablespoons olive oil

  • 1 medium onion, finely chopped

  • 1 green bell pepper, diced

  • 4 cloves garlic, minced

  • 1 teaspoon ground cumin

  • 1 teaspoon dried oregano

  • 1 bay leaf

  • 1 teaspoon salt

  • ½ teaspoon black pepper

  • 1 tablespoon red wine vinegar

  • 1 teaspoon sugar (optional)

  • Fresh cilantro, chopped


Instructions

  • Rinse and drain soaked black beans. Place them in a pot with water or broth and add the bay leaf.

  • Bring to a boil, then reduce heat and simmer for about 60 to 75 minutes until beans become tender.

  • Heat olive oil in a skillet over medium heat. Add chopped onion and diced bell pepper and cook until softened.

  • Stir in garlic, cumin, oregano, salt, and black pepper. Cook for about one minute until fragrant.

  • Add the sautéed mixture to the pot of beans and stir well.

  • Simmer the beans for another 20 minutes so the flavors blend.

  • Mash a small portion of the beans against the side of the pot to thicken the sauce.

  • Stir in red wine vinegar and optional sugar. Taste and adjust seasoning.

  • Remove the bay leaf, garnish with cilantro, and serve hot.
