2 cups dried black beans

6 cups water or vegetable broth

2 tablespoons olive oil

1 medium onion, finely chopped

1 green bell pepper, diced

4 cloves garlic, minced

1 teaspoon ground cumin

1 teaspoon dried oregano

1 bay leaf

1 teaspoon salt

½ teaspoon black pepper

1 tablespoon red wine vinegar

1 teaspoon sugar (optional)

Fresh cilantro, chopped
Instructions

Rinse and drain soaked black beans. Place them in a pot with water or broth and add the bay leaf.

Bring to a boil, then reduce heat and simmer for about 60 to 75 minutes until beans become tender.

Heat olive oil in a skillet over medium heat. Add chopped onion and diced bell pepper and cook until softened.

Stir in garlic, cumin, oregano, salt, and black pepper. Cook for about one minute until fragrant.

Add the sautéed mixture to the pot of beans and stir well.

Simmer the beans for another 20 minutes so the flavors blend.

Mash a small portion of the beans against the side of the pot to thicken the sauce.
