Ingredients

1 cup sago pearls

2 cups fresh dragonfruit flesh, cubed

1 cup coconut milk

1/2 cup whole milk or evaporated milk

1/4 cup granulated sugar

1/2 teaspoon vanilla extract

1/4 teaspoon salt

1/2 cup diced mango or fruit for garnish

1/2 cup crushed ice or chilled water
Instructions

Bring a large pot of water to a boil and add the sago pearls. Cook while stirring occasionally until the pearls turn mostly translucent.

Turn off the heat, cover the pot, and let the pearls sit for 10 minutes to finish cooking.

Drain the pearls and rinse them under cold water until they cool and separate.

Blend the dragonfruit cubes in a blender until smooth.

In a bowl, mix coconut milk, whole milk, sugar, vanilla extract, and salt until the sugar dissolves.

Stir the dragonfruit puree into the coconut mixture until evenly combined.
