Description

Try this colorful Dragonfruit Sago dessert that looks stunning and tastes incredibly refreshing. One spoonful of this creamy tropical treat will instantly transport you to summer.


Ingredients

  • 1 cup sago pearls

  • 2 cups fresh dragonfruit flesh, cubed

  • 1 cup coconut milk

  • 1/2 cup whole milk or evaporated milk

  • 1/4 cup granulated sugar

  • 1/2 teaspoon vanilla extract

  • 1/4 teaspoon salt

  • 1/2 cup diced mango or fruit for garnish

  • 1/2 cup crushed ice or chilled water


Instructions

  • Bring a large pot of water to a boil and add the sago pearls. Cook while stirring occasionally until the pearls turn mostly translucent.

  • Turn off the heat, cover the pot, and let the pearls sit for 10 minutes to finish cooking.

  • Drain the pearls and rinse them under cold water until they cool and separate.

  • Blend the dragonfruit cubes in a blender until smooth.

  • In a bowl, mix coconut milk, whole milk, sugar, vanilla extract, and salt until the sugar dissolves.

  • Stir the dragonfruit puree into the coconut mixture until evenly combined.

  • Add the cooked sago pearls and mix gently.

  • Chill the dessert in the refrigerator for at least 1 hour.

  • Serve cold and garnish with fresh fruit or crushed ice if desired.
