Ingredients

2 boneless skinless chicken breasts

1/3 cup low carb BBQ sauce

2 cups shredded green cabbage

1 cup shredded purple cabbage

1 medium avocado, sliced

1 cup cherry tomatoes, halved

1/2 cup diced cucumber

1/4 cup diced red onion

1/4 cup shredded cheddar cheese

2 tbsp chopped fresh cilantro

2 tbsp ranch dressing

1 tbsp olive oil

1/2 tsp smoked paprika

1/2 tsp garlic powder

Salt and black pepper to taste
Instructions

Pat chicken dry and season with smoked paprika, garlic powder, salt, and pepper.

Heat olive oil in a skillet or grill pan over medium heat. Cook chicken for 6–7 minutes per side until fully cooked.

Remove chicken from the pan and allow it to rest for five minutes.

Slice the chicken and toss with BBQ sauce until well coated.

Divide shredded cabbage into serving bowls and add tomatoes, cucumber, and red onion.

Place BBQ chicken on top of the vegetables.

Add avocado slices and sprinkle cheddar cheese over the bowl.
