- 2 ½ cups all-purpose flour
- 1 tsp baking soda
- ½ tsp salt
- 1 tsp ground ginger
- 1 tsp ground cinnamon
- ¼ tsp ground cloves
- ½ cup unsalted butter, softened
- ½ cup brown sugar, packed
- ¼ cup granulated sugar
- 1 large egg
- ½ cup molasses
- 1 tsp vanilla extract
- 1 cup heavy cream
- 4 oz cream cheese, softened
- ¼ cup powdered sugar
- ½ tsp vanilla extract
Instructions
- In a medium bowl, whisk together flour, baking soda, salt, ginger, cinnamon, and cloves.
- In a separate large bowl, beat butter with brown sugar and granulated sugar until light and fluffy. Add egg, molasses, and vanilla extract. Mix until combined.
- Gradually add dry ingredients to wet ingredients and mix until a soft dough forms.
- Wrap dough in plastic wrap and refrigerate for at least 30 minutes.
- Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Roll dough into 1-inch balls, place 2 inches apart on the baking sheet, and flatten slightly.
- Bake for 10-12 minutes until edges are lightly golden. Cool completely on a wire rack.
- Beat cream cheese with powdered sugar and vanilla until smooth. Whip heavy cream until stiff peaks form, then fold into cream cheese mixture.
- Spread or pipe cream filling onto the bottom of one cookie and sandwich with another. Repeat.
