Ingredients

2 ½ cups all-purpose flour

1 cup unsalted butter, softened

1 ½ cups granulated sugar

2 tablespoons fresh lemon juice

1 tablespoon lemon zest

1 teaspoon vanilla extract

2–3 drops pink food coloring

1 cup powdered sugar

1–2 tablespoons lemon juice for glaze
Instructions

Preheat oven to 350°F and line baking sheets with parchment paper.

Whisk flour, baking powder, baking soda, and salt in a bowl.

Beat butter and sugar until light and fluffy.

Add egg, lemon juice, zest, vanilla, and food coloring. Mix well.

Gradually combine dry ingredients with wet mixture.

Roll dough into tablespoon-sized balls and place on baking sheet.
