- 2 1/2 cups all-purpose flour
- 1 cup sourdough discard
- 1/2 cup cold unsalted butter
- 1 tsp salt
- 1 egg
- 2 to 3 tbsp cold water
- 1 lb ground beef
- 1 small onion
- 2 garlic cloves
- 1 small red bell pepper
- 1 tsp smoked paprika
- 1 tsp cumin
- 1/2 tsp black pepper
- 1 tsp salt
- 2 tbsp tomato paste
- 1/4 cup chopped green olives
- 2 tbsp chopped parsley
- 1 egg for egg wash
Instructions
- Combine flour and salt, then cut in cold butter until crumbly.
- Mix in sourdough discard and egg, adding cold water until dough forms.
- Chill the dough for 30 minutes.
- Brown the ground beef in a skillet, then add onion, garlic, and bell pepper.
- Stir in tomato paste, spices, olives, and parsley. Cool the filling.
- Roll out the dough and cut into circles.
- Add filling to each circle, fold, and seal the edges.
- Brush with egg wash.
- Bake at 400°F for 20 to 25 minutes until golden brown
