Crispy on the outside and perfectly savory inside, these Delicious Sourdough Empanadas are the ultimate comfort snack. A genius way to use sourdough discard and impress everyone at the table.


Ingredients

  • 2 1/2 cups all-purpose flour
  • 1 cup sourdough discard
  • 1/2 cup cold unsalted butter
  • 1 tsp salt
  • 1 egg
  • 2 to 3 tbsp cold water
  • 1 lb ground beef
  • 1 small onion
  • 2 garlic cloves
  • 1 small red bell pepper
  • 1 tsp smoked paprika
  • 1 tsp cumin
  • 1/2 tsp black pepper
  • 1 tsp salt
  • 2 tbsp tomato paste
  • 1/4 cup chopped green olives
  • 2 tbsp chopped parsley
  • 1 egg for egg wash

Instructions

  • Combine flour and salt, then cut in cold butter until crumbly.
  • Mix in sourdough discard and egg, adding cold water until dough forms.
  • Chill the dough for 30 minutes.
  • Brown the ground beef in a skillet, then add onion, garlic, and bell pepper.
  • Stir in tomato paste, spices, olives, and parsley. Cool the filling.
  • Roll out the dough and cut into circles.
  • Add filling to each circle, fold, and seal the edges.
  • Brush with egg wash.
  • Bake at 400°F for 20 to 25 minutes until golden brown
