Ingredients

1 cup (120 g) almond flour, finely ground

1 ¾ cup (200 g) powdered sugar

3 large egg whites, room temperature

¼ cup (50 g) granulated sugar

¼ teaspoon cream of tartar

½ teaspoon vanilla extract

½ cup (120 g) unsalted butter, softened

8 oz (225 g) cream cheese, softened

¾ cup (90 g) powdered sugar for filling

½ cup (75 g) freeze-dried strawberries, crushed into powder

1 teaspoon lemon juice
-
Optional: fresh strawberry slices for garnish
Instructions

Preheat oven to 300°F (150°C) and line baking sheets with parchment paper. Sift almond flour and powdered sugar.

Beat egg whites until foamy. Add cream of tartar and gradually add granulated sugar until stiff peaks form. Mix in vanilla extract.

Fold almond flour mixture into whipped egg whites until batter flows like lava.

Pipe 1.5-inch circles onto prepared sheets and tap to release air bubbles. Let rest 30–60 minutes to form skin.

Bake one sheet at a time for 15–18 minutes. Cool completely.

Beat butter and cream cheese until smooth. Gradually add powdered sugar, lemon juice, and strawberry powder.

Pipe filling onto one shell, sandwich with another, optionally add a fresh strawberry slice.

Refrigerate for at least 24 hours before serving, bring to room temperature to enjoy.
