Description

These Delicious Strawberry Cheesecake Macarons are light, creamy, and melt-in-your-mouth delicious. Perfect for impressing guests or treating yourself!


Ingredients

  • 1 cup (120 g) almond flour, finely ground

  • 1 ¾ cup (200 g) powdered sugar

  • 3 large egg whites, room temperature

  • ¼ cup (50 g) granulated sugar

  • ¼ teaspoon cream of tartar

  • ½ teaspoon vanilla extract

  • ½ cup (120 g) unsalted butter, softened

  • 8 oz (225 g) cream cheese, softened

  • ¾ cup (90 g) powdered sugar for filling

  • ½ cup (75 g) freeze-dried strawberries, crushed into powder

  • 1 teaspoon lemon juice

  • Optional: fresh strawberry slices for garnish


Instructions

  • Preheat oven to 300°F (150°C) and line baking sheets with parchment paper. Sift almond flour and powdered sugar.

  • Beat egg whites until foamy. Add cream of tartar and gradually add granulated sugar until stiff peaks form. Mix in vanilla extract.

  • Fold almond flour mixture into whipped egg whites until batter flows like lava.

  • Pipe 1.5-inch circles onto prepared sheets and tap to release air bubbles. Let rest 30–60 minutes to form skin.

  • Bake one sheet at a time for 15–18 minutes. Cool completely.

  • Beat butter and cream cheese until smooth. Gradually add powdered sugar, lemon juice, and strawberry powder.

  • Pipe filling onto one shell, sandwich with another, optionally add a fresh strawberry slice.

  • Refrigerate for at least 24 hours before serving, bring to room temperature to enjoy.
