Ingredients

  • 12 oz pasta such as penne or rigatoni

  • 2 medium sweet potatoes, peeled and diced

  • 1 tablespoon olive oil

  • 3 cloves garlic, minced

  • 1 small onion, finely chopped

  • 1 cup milk

  • 1/2 cup vegetable broth

  • 1 cup shredded mozzarella cheese

  • 1/2 cup grated parmesan cheese

  • 1/2 teaspoon smoked paprika

  • 1/2 teaspoon salt

  • 1/4 teaspoon black pepper

  • 1/2 teaspoon dried thyme

  • 1/2 cup breadcrumbs

  • 1 tablespoon melted butter


Instructions

  • Preheat oven to 400°F (200°C). Toss diced sweet potatoes with olive oil, salt, and pepper, then roast for about 20–25 minutes until tender.

  • Bring a large pot of salted water to a boil and cook pasta until slightly under al dente. Drain and set aside.

  • In a skillet over medium heat, sauté chopped onion until soft. Add minced garlic and cook for another minute.

  • Blend roasted sweet potatoes with milk, vegetable broth, smoked paprika, thyme, salt, and pepper until smooth and creamy.

  • In a large bowl, mix cooked pasta with the sweet potato sauce until evenly coated.

  • Transfer the pasta mixture to a greased baking dish and sprinkle mozzarella and parmesan over the top.

  • Mix breadcrumbs with melted butter and sprinkle evenly over the cheese layer.

  • Bake at 375°F (190°C) for 20–25 minutes until bubbly and golden.
