12 oz pasta such as penne or rigatoni

2 medium sweet potatoes, peeled and diced

3 cloves garlic, minced

1 small onion, finely chopped

1 cup milk

1/2 cup vegetable broth

1 cup shredded mozzarella cheese

1/2 cup grated parmesan cheese

1/2 teaspoon smoked paprika

1/2 teaspoon salt

1/4 teaspoon black pepper

1/2 teaspoon dried thyme

1/2 cup breadcrumbs

1 tablespoon melted butter
Instructions

Preheat oven to 400°F (200°C). Toss diced sweet potatoes with olive oil, salt, and pepper, then roast for about 20–25 minutes until tender.

Bring a large pot of salted water to a boil and cook pasta until slightly under al dente. Drain and set aside.

In a skillet over medium heat, sauté chopped onion until soft. Add minced garlic and cook for another minute.

Blend roasted sweet potatoes with milk, vegetable broth, smoked paprika, thyme, salt, and pepper until smooth and creamy.
