Ingredients

  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda

  • 1 teaspoon cinnamon
  • 2 large eggs
  • 3/4 cup granulated sugar
  • 1/4 cup brown sugar
  • 1/2 cup vegetable oil
  • 1/4 cup Greek yogurt
  • 1 teaspoon vanilla extract
  • 1 cup grated zucchini
  • 1 cup fresh blueberries
  • 1 tablespoon flour for blueberries

Instructions

  1. Preheat oven to 375°F and line a muffin tin.
  2. Whisk flour, baking powder, baking soda, salt, and cinnamon.
  3. Mix eggs, sugars, oil, yogurt, and vanilla.
  4. Fold in grated zucchini.
  5. Combine wet and dry ingredients gently.
  6. Toss blueberries in flour and fold into batter.
  7. Fill muffin cups 3/4 full.
  8. Bake for 18 to 22 minutes.
  9. Cool slightly and serve.
