Ingredients

Scale
  • 2 cups heavy cream

  • 1 cup whole milk

  • 3/4 cup granulated sugar

  • 1 tablespoon rosewater

  • 1/4 teaspoon saffron threads

  • 2 tablespoons warm milk

  • 1/2 cup chopped pistachios

  • 1 teaspoon vanilla extract

  • 2 tablespoons cornstarch

  • 1 tablespoon butter


Instructions

  • Soak saffron in warm milk for 10–15 minutes.

  • Heat milk, cream, and sugar in a saucepan while stirring.

  • Mix cornstarch with cold milk and add to the saucepan.

  • Stir in saffron mixture, rosewater, vanilla, and butter.

  • Let mixture cool completely and refrigerate.

  • Churn in an ice cream maker or freeze and stir periodically.

  • Fold in pistachios.

  • Freeze until firm before serving.
