Ingredients

12 large eggs

1/3 cup mayonnaise

1 teaspoon Dijon mustard

1 tablespoon white vinegar or lemon juice

1/4 teaspoon salt

1/8 teaspoon black pepper

1/4 cup finely chopped parsley or dill

1 small red bell pepper, finely diced
Instructions

Hard boil eggs, cool, peel, and slice lengthwise. Remove yolks.

Mash yolks with mayonnaise, mustard, vinegar, salt, and pepper until smooth.

Mix in chopped parsley or dill until filling turns green.

Transfer filling to a piping bag with a star tip.
